Banana Bread
Ingredients:
3 or 4 ripe bananas, smashed
1/3 cup melted butter
1 cup sugar (can easily reduce to 3/4 cup)
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda
Pinch of salt
1 1/2 cups of all-purpose flour
1/4 cup raisins (optional)
1/4 cup raisins (optional)
Directions:
Yield: Makes one loaf.

No need for a mixer for this recipe.
1.Preheat the oven to 350°F (175°C).
2.With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl.
3.Mix in the sugar, egg, raisins (optional) and vanilla.
4.Sprinkle the baking soda and salt over the mixture and mix in.
5.Add the flour last, mix.
6.Pour mixture into a buttered 4x8 inch loaf pan.
7.Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.

Sounds easy enough to make! Unfortunately I am allergic to bananas--but my Mom eats them daily and she hates throwing them away!!

I've never added raisins to my banana bread. Sounds like a great addition. I also use oil instead of melted butter. Sounds like a great recipe though. Yum

I love banana bread. people used to think i was crazy when i didnt put nuts in it but i think it just takes away from the fluidity of the bread!
